Oven temperatures explained

UK recipes give temperatures in °C for a conventional (electric) oven, in °C fan for a fan-assisted oven, and sometimes as a Gas Mark from 1/4 to 10. American recipes use °F. The exact maths is °F = °C × 9/5 + 32, but recipes use tidy round numbers, so 180°C is written as 350°F even though it is really 356°F, and this converter shows both the exact value and the usual recipe equivalent. A fan oven circulates hot air, so it cooks a little faster: reduce the conventional temperature by about 20°C (or follow your oven manual, which may say 10–20°C or a percentage). Gas Marks are a fixed scale, so a temperature between two marks is shown with the nearest one.

Every oven runs a little hot or cold, especially older ones, so an inexpensive oven thermometer is worth having. For a wider set of kitchen measures see our Cooking Converter.
